These rich and chunky cookies are a fan favourite (my fans in this case being my family, friends, and uni coursemates) and is definitely my most requested bake at any event I offer to cook for. They are sure to go down a treat wherever you take them!
This chunky chocolate orange cookie is actually an adaptation of my favourite triple chocolate chunk recipe, which I will make sure to post as soon as I next make it!
Ingredients
- 200g Butter
- 300g Golden sugar
- 2tsp Vanilla extract
- 2 Eggs
- 300g Self raising flour
- 80g Cocoa powder
- 1tsp Baking powder
- 300g Orange flavoured chocolate
- 1 Orange
Directions
- Preheat the oven to 180°C (160°C fan)
- Chop up the chocolate into chunks of your preferred size, zest and juice the orange, and set aside
- Cream the butter and sugar, then mix in the eggs and vanilla
- Add the flour, cocoa powder and baking powder to the wet mixture, and mix until fully combined
- Finally add the chocolate, orange zest, and a few tablespoons of orange juice to the bowl (This mixture is quite soft for a cookie dough so don’t be surprised by the texture, however if it’s still sticky after adding the orange juice then don’t be afraid to add a dash more flour to bring it all together)
- Because of the softness of this dough it tends to spread when cooking, so refrain from flattening the balls of uncooked dough, otherwise they will end up thin and crispy. A heaped tablespoon is the size I prefer for these cookies, but feel free to make them bigger/smaller depending on personal preference.
- Bake for 12-15 minutes and then store in an airtight container once cooled
