

This recipe is originally one from a selection of recipes that I developed for a school project (EPQ) I did back in 2020/2021, which was a recipe book dedicated to different biscuits/cookies from an array of different countries all over the world.
These lemon biscuits (biscoitos) are a classic treat from Portugal, and are crunchy and sweet but also light and airy with a subtle lemon flavour. These simple biscuits are a lovely snack alongside a cup of tea or coffee!
note: this recipe makes a rather large batch of biscuits – scale the ingredients down for a smaller batch!
Ingredients
- 125g Butter
- 200g Caster sugar
- 1 Lemon (juice and zest)
- 1 tsp Vanilla extract
- 2 Eggs
- 1 tsp Cinnamon
- 500g Plain flour
Directions
- Preheat the oven to 210°C (190°C)
- Beat the eggs, sugar and lemon zest in a large bowl
- Into the same bowl, add the lemon juice (leave a small portion aside for a light brushing before baking), butter, and vanilla extract
- Gradually add the flour and cinnamon, and mix until you have a smooth dough
- Roll the dough into thin sausages and shape them into snail shell and other twists or oval shapes (as pictured above) and place on a lined baking tray
- Brush the shapes with the set aside lemon juice, and bake for 15-20 minutes or until lightly golden around the edges
- Allow to cool completely before storing in an airtight container
