Koulourakia Lathera

This recipe is originally one from a selection of recipes that I developed for a school project (EPQ) I did back in 2020/2021, which was a recipe book dedicated to different biscuits/cookies from an array of different countries all over the world.

The Koulourakia is a traditional Greek easter biscuit, and these are a vegan iteration of this traditional treat. This version of the biscuit has a stronger orange and spiced flavour, as well as a slightly crunchier texture than its traditional counterpart.

Ingredients

Dough

  • 125g Olive oil
  • 50g Caster sugar
  • 50g Muscovado sugar
  • 125ml Orange juice
  • 240g Plain flour
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1 tsp cinnamon

Dusting

  • 2 tbsp Caster sugar
  • 1 tbsp Cinnamon

Directions

  1. Preheat the oven to 180°C (160°C fan)
  2. Mix the olive oil, sugar and orange juice in a large bowl and set to the side
  3. In a separate bowl, combine the flour, baking powder, baking soda, and cinnamon
  4. Slowly add the dry mixture into the large wet mixture bowl and fold together to create a soft dough
  5. Cover the dough and leave for 10 minutes
  6. Mix 2 tbsp of caster sugar and 1 tbsp of cinnamon to create a dusting for the biscuits
  7. Roll the dough into the desired shape (a twisted ‘8’ shape is traditional, but other shapes like those pictured above work too) and coat in the sugar and cinnamon dusting
  8. Place on a lined tray and bake for 15-17 minutes, or until golden brown
  9. Once cool, store in an airtight container
