Vanillekipferl

This recipe is originally one from a selection of recipes that I developed for a school project (EPQ) I did back in 2020/2021, which was a recipe book dedicated to different biscuits/cookies from an array of different countries all over the world.

These sweet and crumbly crescent shaped biscuits are notably very popular in Austria, but are also enjoyed in many other European countries.

Ingredients

  • 200g Plain flour
  • 70g Ground almonds
  • 60g Icing sugar*
  • 140g Butter
  • 1 tsp Vanilla extract

*plus extra to dust

Directions

  1. Combine the flour, almonds, sugar, butter, and vanilla in a bowl and mix until you have a smooth dough
  2. Wrap the dough in cling film and chill for at least an hour
  3. Preheat the oven to 175°C (155°C fan)
  4. Roll out the chilled dough into a long ‘snake’ and cut into equal segments around 2-3″ long
  5. Take the small segments and mould into crescent shapes (as seen in the above photos) and place on a lined tray
  6. Bake for 15 minutes or until lightly golden
  7. Once cool, dust with icing sugar and store in an airtight container
